1/2cupwater
10fresh mint leavesplus mint sprigs for garnish
1poundfresh strawberrieshulled
zest of 1 lime
juice of 2 limes

Instructions
Make simple syrup by combining honey, water and mint leaves in a small saucepan over medium heat.
Heat until honey and water are well combined, remove from heat and let stand for 30 minutes.
Remove mint leaves and chill.
Place strawberries, simple syrup, lime zest and lime juice in a blender along with a few ice cubes.
Blend until smooth, or desired consistency.
Serve in glasses garnished with mint sprigs and slices of fresh lime.
Notes
For an even lighter version of this, substitute the honey with a stevia based product. Just make sure you check a conversion chart, because depending on the brand you use, they may not substitute equal parts. Swerve is equal parts, Truvia is twice as sweet as honey.
Make it a cocktail by adding a shot of rum to each glass.
You can use either fresh or frozen fruit. If you use frozen, omit the ice. Using frozen berries will result in a thicker drink that's more slushy (YUM), if you like it to stay thinner, just add a bit of water.
Make the simple syrup ahead of time. You can also adjust the amount of syrup based on your preferences. If you have any left over, add it to some sparkling water or another mocktailto add flavor and sweetness.
