Preheat oven to 400.
Heat the butter in a large skillet over medium heat.
Add the onions, reduce heat to medium low, and cook, stirring occasionally, until soft and golden brown.
Stir in the apples, salt, and pepper and cook until just tender, about 2 minutes.
Place each sheet of pastry on a parchment lined baking sheet and prick all over with a fork.
Spread with the Greek yogurt, leaving a 1/2 inch border.
Top with the onion mixture and bake until the pastry is crisp and browned, 30 minutes.
Cut into squares before serving.

Crumple parchment paper into a ball, then straighten out, this makes it much more pliable to work with when placing it on your pan.
For this recipe, don't quite caramelize all the way to avoid getting too dark in the oven.
Make sure to use Greek yogurt because of its thickness. Sour Cream is a great substitute.
Don’t forget to poke holes in the dough! This will allow the steam to escape, which keeps it level and prevents it from puffing up too tall as it bakes.
Apples can be diced instead of sliced if you prefer.
For a variation, try some cheese. Reduce or omit the yogurt and dot the caramelized onion puff pastry with a little gorgonzola or goat cheese.
