Creamy oats, drenched in yogurt and coconut milk with a touch of sweet, topped with toasted coconut. This is one of the best overnight oats recipe I’ve made so far.

Best Overnight Oats Recipe

Overnight oats is one of our favorite summer breakfasts. And summer is approaching… it feels ever so slowly, but it is coming! Summer is my most favorite season. I’m a warm weather person. I can handle the heat, it doesn’t bother me. Bring on the sunshine!

I love the pace of summer. Things slow down. No lessons, no school, loads of playing outside and exploring, reading by the pool, trips to the beach… {sigh} it can’t come quick enough for me. What’s your favorite season?

Overnight oats are super easy to make,  you can make just one, or one for each person in the family, or, make up five or six and breakfast is set for the week. They keep just fine in the fridge. They also work very well for a breakfast on the go.

The best overnight oats recipe is also wonderfully good for you! I kind of feel like I’m eating a treat with some of these recipes, but it’s guilt free and I know my body is getting the protein and fiber and all the other nutrients it needs. Isn’t it great when nutrition tastes good?

Recipe Notes~

  1. I prefer to use non-fat plain Greek yogurt and sweeten with honey, maple syrup, or stevia, but any yogurt will do. Vanilla is de-lish!
  2. When making a big batch, I mix all the ingredients in a large bowl and then place it into the jars, but if you’re just making a few, making it right in the jars is great.
  3. Kids love to make this too, so give them each a jar and they can make their own breakfast
  4. Any type of milk works well~ cow’s milk, almond milk, cashew milk, coconut milk.
  5. Always make these the day before you’ll eat them for best results. And you’ll be so glad to wake up to breakfast ready!

Equipment

  • mason jars, or containers with lids

Ingredients

  • 1/4 cup old fashioned rolled oats
  • 1/3 cup Almond Milk
  • 1 scoop 100% whey protein isolate
  • stevia, to taste I like one packet of truvia
  • 1/4 cup plain nonfat Greek yogurt
  • 1/2 Tbsp chia seeds
  • 1/8 tsp coconut extract
  • 2 tbsp toasted coconut plus more for garnish

Instructions

  • Place ingredients in a pint sized mason jar or other container.
  • Cover and shake well, place in the refrigerator overnight.
  • Garnish with additional toasted coconut if desired.

Notes

To toast coconut:  Preheat oven to 300. Place unsweetened shredded coconut, or coconut chips on a baking sheet. Place in the oven for about 2-3 minutes.  Watch it and check often, tossing once.
