This Frozen Virgin Raspberry Daiquiri lends a slightly tart, slightly sweet raspberry flavor to a mixture of fresh-squeezed lime, rum extract, and simple syrup mix. 

Raspberries are in season from May to August. However, this raspberry daiquiri recipe uses them when they are frozen so that you can enjoy fresh raspberry flavor whenever! All you need is a blender and five minutes to take this four ingredient drink from the freezer to your table.

I’m up to my tricks again, taking classic cocktails and making them into mocktails. 😁 Just like there is an art to making a cocktail, there is an art to making a mocktail. If you simply leave out the alcohol you’re missing a flavor profile that can’t be ignored.

  • Raspberries – Frozen raspberries give you peak flavor and thick texture. A few fresh raspberries make a nice garnish.
  • Lime Juice – Fresh is the best! This citrus press makes it easy to squeeze those limes.
  • Simple Syrup – Works great in this recipe because it’s liquid and the sugar is already dissolved, so it disperses easily and you don’t have crunchy crystals. Read on to learn how to make it.
  • Rum Extract – Rum extract has a concentrated rum flavor without the high alcohol content. It does add a flavor profile to this drink, but you can leave it out and still have a well balanced mocktail.
  • Raw Sugar– also known as Turbinado sugar. This is completely optional and just for adding a sugar rim to the glass.

Frozen raspberry daiquiri mocktails are a fun drink to make for parties or just for relaxing. I love how easily they come together with just the right ingredients.

How to Make Simple Syrup

This recipe calls for simple syrup and just in case you haven’t made this before, I want to tell you how. It’s super easy! You can make as much as you want and store it in the fridge to sweeten other drinks like lemonade, Iced Tea, or this Strawberry Mojito. It will keep for about a month.

It’s best to prepare this ahead of time since you want it cooled before you use it. For this recipe, you could do as little as 1/4 cup and have some leftover. Simple syrups can also be flavored with fruit or herbs. But today we’re keeping it simple! (haha!)

  1. Put equal parts water and sugar (or honey) in a small sauce pan.
  2. Heat on low and stir until the sugar is dissolved.
  3. Cool and chill. Store in an airtight container in the fridge for up to 1 month.

You can make simple syrup with a natural sugar substitute such as erythritol, But not all sweeteners are created equal, so check a conversion chart! Also, sugar substitutes don’t have the preservation quality that sugar does, so they won’t last more than a few days in the fridge.

How to Make a Virgin Raspberry Daiquiri

  1. Add all ingredients to a blender.
  2. Blend until completely smooth (about one minute) and serve immediately. Garnish with a few raspberries or a wedge of fresh lime if you want.

Optional: If the seeds bother you, you can strain them out before you serve it. Use a fine mesh strainer, pour the mixture through it and press through until the seeds remain and the liquid has gone through.

Expert Tips

  • For less sugar– This has such a small amount of processed sugar in it, but if this bothers you, you can use honey in the simple syrup, or leave it out and just sweeten it with a stevia based sweetener like Truvia.
  • Blender Speed – I love my Vitamix because it has a ‘frozen dessert’ and ‘smoothie’ setting. Either of those would work for this. But if you have a regular blender, start on the lowest setting. The lower speed will suck the bigger chunks of fruit downward and blend them more evenly. If you leave it on a higher speed the entire time, the chunks of fruit won’t blend as well. Start low for thirty seconds. Then high for another thirty seconds. 
  • Fresh raspberries  can be used instead of frozen, but add 1-2 cups of ice to make it slushy/frozen and blended.
  • Add more water – This recipe makes a thick blended drink. Add more water if you prefer a thinner consistency.
  • Rum extract – This ingredient can be increased or eliminated based on your preference. It gives it that sweet toasted sugar rum flavor.
  • Rim the glass in sugar for a beautiful presentation and a little extra. Place the sugar on a small saucer. Take a lime wedge and swipe it all around the top of the glass to get the juice on it. Dip the top of the glass in the saucer of sugar.
  • Make it a cocktail! Just add 2 shots of rum to the blender before mixing. Eliminate the rum extract.
  • Daiquiris are not always frozen – A variation of this would be to blend fresh raspberries, strain out the seeds (in this case I would). Then add lime juice, rum extract, and ice to a cocktail shaker. Then shake until the container is nice and cold. Pour into a coupe glass and enjoy.

However, the frozen ingredients to make them (besides the fresh lime) will store in the freezer for up to three months. Rum extract should store for 3 to 4 years. Simple Syrup will last for 1 month in the refrigerator.
