This Lavender Lemonade Mocktail is light, bubbly, and bursting with flavor. It’s simple to make, but it tastes like something straight out of a fancy café. Perfect for sipping on a warm afternoon or serving at a gathering with friends.

There’s something about the combination of lavender and lemon that just feels fresh and bright. The floral notes of lavender paired with tart, zesty lemon? Perfection. Add a little sparkle, and you’ve got a drink that feels just as fancy as it is refreshing.

Ingredient Notes
A few quick notes on the ingredients I use and why they work so well together.

- Lavender Simple Syrup– you can use store bought, or make your own (see the notes in the recipe card or the Tips & Tricks section). I have done both, but for this recipe I purchased my lavender syrup from a local lavender farm, I believe they will ship. I also like the Monin brand syrups because there are no artificial colors or flavors.
- Lemon Juice– Fresh is best! I’m a huge fan of freshly squeezed juices when at all possible, but this? We’re making homemade lemonade, you’ve gotta squeeze it your self. Grab a citrus press, and get squeezing! It’s worth the effort, I promise.
- Sparkling Water- We have a soda stream maker that I love. If using store bought, I like the Topo Chico brand, but any of your favorites will do. I use an unflavored version as we’re adding the flavor.
- Lemon slices and lavender buds – Optional garnishes. Both fresh lavender and dried lavender work well for a garnish. If you purchase dried lavender, just make sure it’s culinary/food grade.
I planted a lavender plant a couple of years ago and last year I dried a bunch of it. You can use it to flavor food, but also makes a great little sachet for your drawers.

This comes together in just a few steps—let’s do it!

- Fill your glass with some ice. I’m a ‘lots of ice’ kind of gal. Then add in the lavender syrup.
- Next, pour in the lemon juice.
- Top it off with sparkling water.
- Lastly, give it a stir to blend it all together. If you prefer a layered look, you don’t have to stir it. But I prefer the flavors blended.

- Use freshly squeezed lemon juice for the ultimate flavor.
- Chill Your Ingredients – Starting with cold sparkling water will help keep your mocktail crisp and refreshing.
- Gently roll the lemon back and forth on the counter top with the palm of your hand before juicing or slicing. This will release some of the juices making sure you get everything you can out of it.

- Make Your Own Lavender Syrup – If you’d like to go the homemade route, simply combine equal parts water and sugar, heat until the sugar dissolves, and add fresh lavender blooms or culinary dried lavender. Let it steep for at least 30 minutes before straining.

Want to elevate your mocktail game? Here are some ways to make this drink extra special:
- Sugar Rim – use a lemon wedge to line the rim of your glass with the juice, then dip it into sugar for a fun, elegant touch.
- Lavender Ice Cubes – Freeze some lavender blooms or lemon zest into ice cubes for a beautiful presentation.
- Batch It! – Making this for a crowd? Multiply the ingredients and mix everything (except the sparkling water) in a pitcher. When serving, pour into glasses and top each with sparkling water to keep the bubbles fresh.

You can, but it will be sweeter and might overpower the lavender flavor. Freshly squeezed lemon juice gives the best balance. Store bought lemonade is going to be sweetened and we are using the lavender syrup to both sweeten and add floral notes to this drink.
It has a light sweetness from the lavender syrup, but it’s not overly sugary. You can adjust the amount of syrup to taste.
This mocktail is best enjoyed fresh because of the carbonation. If you need to prep ahead, you can mix the lavender syrup and lemon juice in advance and store it in the fridge. When ready to serve, just add ice and sparkling water.

Lavender Lemonade Mocktail
Equipment

Ingredients
- Ice
- 2 tablespoons (1 ounce) lavender simple syrup store bought or homemade
- 2 tablespoons (1 ounce) freshly squeezed lemon juice about 1 lemon, but can depend on the size and juiciness of the lemons.
- 8 ounces sparkling water chilled
- Lemon slices optional garnish
- Fresh or dried lavender stem optional garnish
Instructions
- Fill the glass ⅔ of the way with ice, or your desired amount.
- Pour the lavender syrup into the glass, then follow with the lemon juice. Top off the glass with sparkling water.
- Gently stir, enjoy immediately
Notes
- I purchased my lavender syrup from a local lavender farm, I believe they will ship. I also like the Monin brand syrups because there are no artificial colors or flavors.
- You can also make your own lavender syrup, by using equal parts water and sugar, heating it over medium low heat until the sugar is melted, and then add fresh lavender blooms, remove it from the heat and allow it to steep for at least 30 minutes. Use about 10-15 blooms per cup of water/sugar mixture. You can also use culinary dried lavender, you’ll need about 4 tablespoons.
